Breakfast burritos loaded with sausage, bacon, eggs, crispy tater tots, cheese, salsa, and mashed avocado.

    Step1

    Prepare bacon to your liking.

    Line a baking sheet with foil and arrange the tater tots on it. Bake according to the package instructions. When making breakfast burritos, I usually cook tater tots a bit longer to make them extra crunchy.

    Cook the sausage over medium heat in a skillet until its internal temperature reaches 160°F. and it is golden brown.

    Step4

    Beat the eggs and get them ready to cook. Lightly spray the pan with vegetable oil cooking spray. For fluffy scrambled eggs, preheat your skillet over medium heat for quick, even cooking that creates steam to make them puff up. For creamy scrambled eggs, start with a cold pan to allow slow, gentle cooking for a silky texture.

    Step5

    Shred 4 ounces of sharp cheddar cheese, mash 2 avocados and warm your tortillas in a hot skillet. Fill your burritos with creamy or fluffy eggs, cheese, sausages, chopped or whole bacon slices, mashed avocado, crispy tater tots, and your Salsa of choice.

    Step6

    Fold in the sides of the tortilla, wrap it tightly, and slice it in half.
